30 days to go.. yeah!

Now what do we cook while we are there? In the past we have made sandwiches for lunch and a big meal for supper. This year I don't want to spend my beach time cooking. This is our mini vacation to the beach, just a few days. I thought about getting those family dinners from the freezer section. Maybe even bring the slow cooker to do a roast with instant potatoes.

Looking for supper ideas..
How do yall work supper plans?

One more thing, we have a birthday to celebrate, any ideas on where to eat special? Yeah, one less meal to cook :)

Lots of folks enjoy the deli meals available at Publix Grocery Store. Some can even be frozen to be used later. As far as frozen dinners go, we find that the Marie Callendar meals are far and away better than most any others available in the frozen food section!! Your idea of using a slow cooker is great, too, and we've done that several times. Keep a nice variety of fresh fruits and veggies on hand for quick and healthy snacks! 8) Of course, then there are plenty of restaurants that deliver or have handy pick-up windows ... just a phone call away! ;) Have a great vacay!

My favorite topic...FOOD!

I don't mind cooking while I'm down there...but that's just me.

I've often thought about bringing a slow cooker. Do you like Mexican food? My family loves slow cooker beef tacos.

2 lbs chuck roast
2 tablespoons Chili powder (or to taste)
2 tablespoons Cumin (or to taste)
2 sticks of butter (not margarine)

season the chuck roast with the chili powder and cumin, set inside slow cooker. Unwrap butter and place whole sticks, uncut, on top of roast. Cook on high 4 hours or low 6 hours until tender.

Serve on tortillas with cheese, sour cream, etc...with a side of cheese dip...and of course Margaritas! ;)

Get you a good mess of peel and eat shrimp. Take a bottle of Italian dressing and a stick of butter. get it hot drop shrimp in, make a salad, heat your choice of a bread and you have your meal. This ole country boy loves to sop the dressing/butter mixture. Simple, easy, not a huge loss of beach time to prepare.

We eat Mexican every Friday night.

Shrimp and fish are regulars on our menu.
